Yields4 Servings

In a hurry but want a satisfying, great tasting and easy to make pasta dish that tastes as good as the actual sandwich? This is the one to try! With some simple ingredients like ground bison and penne pasta, you can easily make the taste of this classic sandwich into a wonderful, flavourful meal that even the kids will like.

 2 cups penne pasta
 1 lb ground bison
 2 tbsp butter or margarine
1 pt container of white button mushrooms, sliced
1 medium onion (white or yellow), chopped
 1 green pepper, chopped
 1 can of onion soup
 2 tbsp Worcestershire sauce
 1 tbsp cornstarch
½ cup mozzarella (or provolone) cheese (small cubes)
 Salt and pepper to taste
1

Cook noodles according to package, al dente level is best (so your pasta isn’t mushy) and drain. Set aside.

2

While cooking the pasta, in a large skillet (cast iron works great), cook up the ground bison on medium heat. Once cooked, remove from pan (leaving any drippings in the pan because they add that great flavor later) and place the cooked meat on a plate.

3

Melt butter or margarine in the same skillet and then fry up those mushrooms. Leave them until they are golden brown, approximately 5 minutes. Add onions and green peppers, cooking 2-3 minutes more.

4

Reduce heat to low and then add the onion soup and Worcestershire sauce. In a small bowl or cup, whisk up the cornstarch with 2 tbsp of water and then whisk that into the pan to thicken up the sauce.

5

Add back the cooked bison and pasta to the skillet, add the cheese and mix together. Salt and pepper for taste and voila, an amazing flavour packed meal that tastes fabulous!
