Super easy and delicious, this pasta dish can use either a pure bison sausage or bison farmer style sausage in whatever flavour you prefer and turn it into a gourmet, flavourful dish that just pops with colour and makes anyone look like a star in the kitchen! With some Cajun seasoning, fresh vegetables and that splash of red wine, it is a crowd pleaser too and can be served any day of the week!
Begin by getting the pasta on and cook to al dente (not quite fully cooked) according to package instructions. Once cooked, drain.
While the pasta is cooking, remove casings from sausage and slice into approximately ½ inch thick slices. In a large skillet (cast iron works great), heat on medium high heat, 1 tbsp olive oil and add sausage. Cook until no longer pink, add another tbsp. olive oil and add onions and garlic along with approximately ½ tbsp of the Cajun seasoning. Cook, stirring often, until the onions are translucent, approximately 2-3 minutes.
Add peppers, tomatoes, mushrooms and remaining Cajun seasoning to the skillet, and stirring constantly, cook for an additional 2 minutes.
Add the wine to the skillet (being sure to pour yourself a glass at the same time), bring to a boil, reduce and simmer, cover for about 5 minutes. Be sure to stir occasionally. Once the liquid is reduced to about half, remove from heat. Add salt if so desired.
Add the cooked, drained pasta and mix everything together. Add the Parmesan cheese and then serve to enjoy your amazing creation!
